Truffle Storage & Cleaning

I always store my truffles on a bed of rice in an airtight container in the fridge. The rice is there to absorb any moisture because the truffles are still ‘alive and breathing’. They emit water and carbon dioxide. If you add eggs to your box of truffles, the eggs will take on the flavour of the truffles after 24 – 48 hours. For extra sybaritic indulgence use fresh duck eggs.

When you are ready to use your truffles, clean the truffle under cold water with a soft toothbrush. Dry with a paper towel and allow to come up to room temperature to maximise their flavour. Just as you would with a cheese.
