13 May 2022 The Summer truffle season is now underway. Tuber Aestivum have a milder flavour than winter truffles. They can used to slice liberally over any dish or great for making truffle butter. Melt 5 parts butter, remove from heat and add 1 part of grated truffles. As the butter cools, stir occasionally so its’s well combined. Store in the fridge for up to two weeks or freeze for up to 3 months. Use at will. This method maximises the flavour of summer truffles. You can buy truffles online now.
6 January 2022 We are pleased to announce we have amazing English Autumn Truffles back in stock.
As was probably expected, there have been problems with importing truffles in to the UK post Brexit. One week the truffles arrive without any issues then the next shipment gets held up for two days and is refused entry. Couple that with incorrect processing of VAT and duty charges and we have ourselves some major headaches, As for caviar the situation is much worse. New legislation requirements through DEFRA and their inability to process the new paperwork has meant delays up more that 5 weeks so far. Caviar stock are very low at the moment. We hope that DEFRA are able to get on top of the situation very soon.

I always store my truffles on a bed of rice in an airtight container in the fridge. The rice is there to absorb any moisture because the truffles are still ‘alive and breathing’. They emit water and carbon dioxide. If you add eggs to your box of truffles, the eggs will take on the flavour of the truffles after 24 – 48 hours. For extra sybaritic indulgence use fresh duck eggs. When you are ready to use your truffles, clean the truffle under cold water with a soft toothbrush. Dry with a paper towel and allow to come up to room temperature to maximise their flavour. Just as you would with a cheese.
The climatic conditions this season are very welcome to truffle lovers. The quality is excellent for both white truffles and autumn truffles. Both types of truffle are experiencing big price decreases. There has never been a better time to order your favourite truffles.
